1 cup cashews
1 teaspoon butter
1 lb. sugar snap peas or snow peas
Pinch of salt and freshly ground black pepper
Place cashews in a wide shallow microwave-safe dish, such as a pie plate. Microwave, uncovered, on high for 3 minutes or until toasted slightly. Stir occasionally. Remove cashews. Add butter and peas to pan. Microwave, covered, on high for 2 to 3 minutes or until peas are tender. Stir twice during cooking. Toss with cashews. Add salt and pepper to taste.
